Mushroom Soup (Sienikeitto)

A delicious and hearty soup that warms the heart and body. Perfect as a starter or a light main dish. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 300 g fresh mushrooms (e.g., button mushrooms or chanterelles)
- 1 large onion
- 2 cloves of garlic
- 4 dl vegetable broth
- 2 dl cream
- 2 tbsp butter
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and finely chop the onion and garlic.
2. Clean and slice the mushrooms.
3. Heat the butter in a pot over medium heat. Add the onion and garlic, sauté for about 5 minutes until soft.
4. Add the mushrooms and cook for another 5-7 minutes until they are cooked through and the moisture has evaporated.
5. Pour in the vegetable broth and bring to a boil. Let the soup simmer for about 10 minutes.
6. Stir in the cream and mix well. Heat the soup for a moment but do not let it boil.
7. Season with salt and pepper to taste.
8. Serve the soup warm, garnished with fresh parsley.
