- 2 bell peppers (red or yellow)
- 1 cup roasted almonds
- 2 garlic cloves
- 1 teaspoon smoked paprika
- 1 tablespoon wine vinegar
- 1 cup olive oil
- Salt and pepper to taste
Instructions:
1. Roast the bell peppers in the oven at 400°F (200°C) for about 15-20 minutes until the skin is charred and blistered.
2. Allow the peppers to cool slightly, then peel off the skin and remove the seeds.
3. Place the peeled peppers, roasted almonds, garlic, smoked paprika, and wine vinegar in a blender.
4. Blend the ingredients until smooth, gradually adding the olive oil while blending.
5. Season with salt and pepper to taste.
6. Serve immediately or store in the refrigerator.
