Spiced Indian Nepali Potatoes

This delicious and spicy potato dish is a perfect side or main course, bringing flavors from India and Nepal. Preparation Time: 30 minutes

Ingredients:
- 500 g potatoes - 2 tbsp oil (such as sunflower or coconut oil)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric
- 1/2 tsp chili powder (to taste)
- 1/2 tsp salt
- 1/2 tsp black pepper
- Juice of 1/2 lemon
- Fresh coriander for garnish
Instructions:
1. Peel and boil the potatoes in salted water until soft. Drain and let cool. 2. Cut the cooled potatoes into cubes.
3. Heat the oil in a frying pan over medium heat. Add cumin seeds and fry until they start to pop.
4. Add the potato cubes to the pan and mix well. Fry for about 5 minutes.
5. Add coriander powder, turmeric, chili powder, salt, and black pepper. Mix well to coat the potatoes with the spices.
6. Fry for a few more minutes until the potatoes are golden brown and crispy.
7. Squeeze lemon juice over the potatoes and mix.
8. Garnish with fresh coriander before serving.
