A simple and delicious recipe for roasted vegetables that can be served as a side dish or main course. Preparation time is 30 minutes, and it serves 4.

Ingredients:

- 2 carrots
- 1 zucchini
- 1 red onion
- 1 bell pepper
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried rosemary or thyme

Instructions:

1. Preheat the oven to 200°C (400°F).
2. Peel and chop the carrots, zucchini, red onion, and bell pepper into bite-sized pieces.
3. Place the vegetables in a large bowl and add olive oil, salt, black pepper, and herbs. Mix well to coat all the vegetables with the seasoning.
4. Spread the vegetables evenly on a baking sheet lined with parchment paper.
5. Roast in the oven for about 20-25 minutes, until the vegetables are tender and have a nice golden-brown color. Stir halfway through cooking.
6. Serve warm.
