A delicious Riesling berry cheesecake that combines the flavor of German wine with a sweet cake. Perfect dessert for a wine night or celebration.

Serving Size: 8-10 servings
Ingredients:
- 200 g digestive biscuits
- 100 g butter
- 250 g fresh berries (e.g. raspberries and blueberries)
- 400 g cream cheese
- 150 g sugar
- 2 eggs
- 150 ml Riesling wine
- 1 tsp vanilla extract
- 1 tbsp lemon juice
- 2 tbsp cornstarch
Instructions:
1. Crumble the digestive biscuits and mix them with melted butter. Press the mixture evenly into the bottom of a cake pan.
2. In a bowl, beat the cream cheese and sugar until smooth.
3. Add the eggs one at a time, followed by the Riesling wine, vanilla extract, lemon juice, and cornstarch. Mix well.
4. Gently fold the berries into the batter.
5. Pour the batter over the biscuit base and smooth the top.
6. Bake at 180°C (350°F) for about 40-45 minutes, until the cake is set.
7. Allow the cake to cool at room temperature, then refrigerate for at least 2 hours before serving.
