Lemon-Infused Ribs

Delicious, juicy ribs flavored with lemon, garlic, and thyme, perfect for two! Preparation Time: 3 hours (including cooking)

Ingredients:
- 700 - 800 g lamb or pork ribs - ½ organic lemon (sliced)
- Salt and pepper
- A few sprigs of thyme
- A pinch of sugar
- 2 - 3 garlic cloves (crushed)
- Olive oil
- A splash of hot water
- Honey to taste
- Lemon juice to taste
Instructions:
1. Trim the ribs if necessary.2. Mix olive oil, lemon slices, crushed garlic, salt, pepper, thyme, and sugar with the ribs.
3. Place all ingredients in a baking dish and add a splash of hot water to the bottom.
4. Bake in a preheated oven at 125°C (257°F) covered with a lid or foil for 2 - 3 hours until the meat pulls away from the bones.
5. Remove the ribs from the oven and let them rest. Strain the juices into a shallow dish and skim off excess fat.
6. Pour the juices into a pot and bring to a boil. Add honey and lemon juice to taste. Reduce and check the flavor.
7. Slice the meat into serving pieces and drizzle with the cooking juices.
8. Finish the ribs under a hot grill until the surface is beautifully browned.
9. Serve immediately while hot!
