A delightful pumpkin soup with a hint of coconut. Preparation Time: 40 minutes
Serving Size: 4 servings
Ingredients:
- 500 g pumpkin
- 2 potatoes
- 1 onion
- 2 garlic cloves
- 1 l vegetable broth
- 2 dl coconut milk
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and chop the pumpkin, potatoes, onion, and garlic.
2. Heat olive oil in a pot and add the onion and garlic. Sauté until soft.
3. Add the pumpkin and potatoes to the pot, mixing well.
4. Pour the vegetable broth into the pot and bring to a boil. Cook until the vegetables are tender, about 20-25 minutes.
5. Use an immersion blender to puree the soup until smooth.
6. Stir in the coconut milk and season with salt and pepper. Heat for a few more minutes.
7. Serve the soup garnished with fresh parsley.
