Ingredients:
- 400 g spaghetti - 150 g bacon or guanciale
- 3 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente. 2. Cut the bacon into small pieces and fry in a pan until golden brown. Add crushed garlic during the last few minutes of cooking.
3. In a bowl, crack the eggs and add the grated Parmesan cheese. Mix well and season with black pepper.
4. Once the pasta is cooked, drain it and add it to the pan with the bacon and garlic. Toss to combine.
5. Remove the pan from heat and quickly add the egg mixture, stirring to create a creamy sauce without scrambling the eggs.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
