Ingredients:
- 150 g mixed leafy greens (such as romaine or arugula)- 1 cucumber, sliced
- 1 red bell pepper, diced
- 1 avocado, diced
- 100 g cherry tomatoes, halved
- 50 g feta cheese, crumbled
- 50 g nuts (such as walnuts or almonds), chopped
- 3 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions:
1. Rinse and dry the leafy greens. Place them in a large salad bowl.2. Add the sliced cucumber, diced bell pepper, avocado, and halved cherry tomatoes to the bowl.
3. Crumble the feta cheese over the salad and sprinkle the chopped nuts on top.
4. In a small bowl, whisk together the olive oil, balsamic vinegar, salt, and pepper to create the dressing.
5. Drizzle the dressing over the salad and gently toss to combine all ingredients.
6. Serve immediately and enjoy the flavors of autumn.
