A delicious pasta dish inspired by the lively Highland cattle of Ratia Ranch, perfect for lunch or dinner. Preparation Time: 30 minutes

Ingredients:
- 300 g pasta (e.g., tagliatelle) - 200 g ground Highland beef
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 red bell pepper, diced
- 200 g cherry tomatoes, halved
- 200 ml cream
- 50 g Parmesan cheese, grated
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh basil for garnish
Instructions:
1. Cook the pasta in salted water according to package instructions. Drain and reserve some cooking water. 2. Heat olive oil in a pan and add the chopped onion. Sauté for a few minutes.
3. Add the crushed garlic and ground beef to the pan. Brown the beef until fully cooked.
4. Stir in the diced bell pepper and cherry tomatoes. Cook until the pepper softens.
5. Pour the cream into the pan and mix well. Let it simmer on low heat for a few minutes.
6. Combine the cooked pasta with the sauce and, if necessary, add some reserved pasta water for a creamier consistency.
7. Season with salt and pepper. Serve with grated Parmesan cheese and fresh basil on top.
