A delicious and nutritious vegetable puree soup that is perfect for cold days. It’s quick to prepare and will please the whole family! Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 2 tbsp olive oil - 1 onion, diced
- 2 garlic cloves, crushed
- 3 carrots, diced
- 2 potatoes, diced
- 1 zucchini, diced
- 1 liter vegetable broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 100 ml cream (optional)
- Fresh herbs (e.g., parsley or basil) for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the diced onion and garlic. Sauté until the onions are soft. 2. Add the diced carrots, potatoes, and zucchini. Cook for 5-7 minutes until the vegetables start to soften.
3. Pour in the vegetable broth and add the salt, black pepper, and thyme. Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes, until all the vegetables are tender.
4. Remove the pot from the heat and blend the soup with an immersion blender or in a blender to your desired consistency.
5. Stir in the cream if using, and mix well. Reheat the soup if necessary.
6. Serve hot, garnished with fresh herbs.
