Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to the package instructions in salted water until al dente. Drain and reserve some pasta water.
2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about a minute.
3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
4. Pour the heavy cream over the spinach and mix well. Allow the sauce to simmer for a few minutes until it thickens slightly.
5. Stir in the grated Parmesan cheese until melted. Season with salt and pepper.
6. Combine the cooked pasta with the sauce. If needed, add a bit of reserved pasta water to loosen the sauce.
7. Serve immediately, garnished with fresh basil if desired.
