Raspberry Pie (Vadelmapiirakka)

A delightful raspberry pie that captivates with its sweetness and the freshness of berries. Easy to make and perfect for a coffee table. Preparation Time: 45 minutes
Serving Size: 8-10 servings
Ingredients:
- 200 g frozen raspberries
- 1 tsp baking powder
- 1 egg
- 3 dl all-purpose flour
- 2 tsp potato starch
- 200 g margarine
- 1.5 dl sugar
- A dollop of honey
Instructions:
1. Whip the margarine and sugar until fluffy. Add the egg and mix well.
2. In a separate bowl, combine the dry ingredients (flour, potato starch, and baking powder) and sift them into the egg mixture. Stir until a smooth dough forms.
3. Divide the dough into muffin tins, reserving some for the lids.
4. Press the dough into the bottom of the tins and add the raspberries on top.
5. Shape the remaining dough into lids and place them over the raspberries.
6. Bake at 175°C (350°F) for about 25-30 minutes, or until the tops are a beautiful golden brown.
7. Allow to cool before serving. You can drizzle a dollop of honey on top for added flavor.
