A delicious and moist dessert that utilizes freshly picked rhubarb from the garden. This pie is perfect as a dessert or a coffee cake!

Serving Size: 8 servings

Ingredients:

- 300 g rhubarb
- 150 g sugar
- 200 g butter
- 250 g all-purpose flour
- 1 tsp baking powder
- 1 dl rolled oats
- 1 egg
- 1 tsp vanilla sugar
- A pinch of salt

Instructions:

1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
2. Wash and chop the rhubarb into small pieces. Mix the rhubarb with 50 g of sugar and let it marinate aside.
3. In a bowl, beat the butter and the remaining sugar until light and fluffy.
4. Add the egg and vanilla sugar to the butter mixture and mix well.
5. In a separate bowl, combine the flour, baking powder, and salt. Add the dry mixture to the butter mixture.
6. Stir in the rolled oats until the batter is smooth.
7. Pour half of the batter into a greased pie dish and spread it evenly.
8. Layer the marinated rhubarb on top of the batter, then pour the remaining batter over the rhubarb.
9. Bake in the oven for about 30-35 minutes, or until the top is beautifully golden brown.
10. Allow to cool before serving.
