Ingredients:
- 300 g pasta (e.g., spaghetti or fusilli)
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 bell pepper, diced
- 1 zucchini, sliced
- 200 g cherry tomatoes, halved
- 1 tsp dried basil
- 1 tsp salt
- 1/2 tsp black pepper
- 50 g parmesan cheese, grated (optional)
- Fresh herbs for garnish (e.g., basil or parsley)
Instructions:
1. Cook the pasta according to the package instructions in salted water. Drain and reserve some cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, sauté for about 2-3 minutes.
3. Add the bell pepper and zucchini, cooking for another 5-7 minutes until the vegetables are tender.
4. Stir in the cherry tomatoes, basil, salt, and black pepper. Cook for an additional 2-3 minutes.
5. Combine the cooked pasta with the vegetables and toss well. If needed, add a little cooking water to prevent the pasta from drying out.
6. Serve topped with grated parmesan cheese and fresh herbs.
