Ingredients:
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, crushed
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 potato, diced
- 1 bell pepper, diced
- 1 liter vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 100 grams green beans, chopped
- Fresh parsley for garnish
Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until soft.
2. Add the carrots, celery, and potato. Cook for about 5 minutes until the vegetables begin to soften.
3. Stir in the bell pepper, vegetable broth, and thyme. Bring the mixture to a boil, then reduce the heat. Let it simmer for about 15 minutes, until all the vegetables are tender.
4. Add the green beans and season with salt and pepper. Simmer for an additional 5 minutes.
5. Serve the soup hot and garnish with fresh parsley.
