A refreshing pasta dish with cherry tomatoes and parmesan, perfect for a light meal.
Preparation Time: 20 minutes
Serving Size: 4
Ingredients:
- 1 tbsp olive oil
- 1 clove garlic
- 4 tbsp Parmesan shavings
- ¼ tsp black pepper
- 300 g spaghetti
- 1 dl parsley
- 1 onion
- 500 g cherry tomatoes
- ¼ tsp salt
- 2 tbsp red wine vinegar
Instructions:
1. Cook the spaghetti according to package instructions.
2. Halve the cherry tomatoes and mash them in a bowl with a potato masher or fork.
3. Finely chop the onion, its greens, and the garlic clove.
4. Heat the olive oil in a pan and add the chopped onion and garlic. Sauté until soft.
5. Add the mashed tomatoes to the pan and mix well.
6. Season the mixture with black pepper and salt.
7. Add the cooked spaghetti and red wine vinegar to the pan. Stir all ingredients together thoroughly.
8. Serve the pasta warm or at room temperature, garnished with Parmesan shavings and chopped parsley.
