This delicious tomato pasta gets its flavor from fresh, ripe tomatoes and is a perfect summer dish. Preparation Time: 30 minutes
Serving Size: 4 servings
Ingredients:
- 400 g pasta (e.g., spaghetti or penne)
- 500 g fresh tomatoes
- 3 garlic cloves
- 1 onion
- 4 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp sugar
- 1/4 tsp chili powder (optional)
- Fresh basil for garnish
- Grated Parmesan cheese (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve some pasta water.
2. Chop the onion and garlic. Heat olive oil in a large skillet over medium heat.
3. Add the onion and garlic to the pan and sauté until soft.
4. Dice the tomatoes and add them to the skillet. Cook the mixture for about 10 minutes until the tomatoes soften and form a sauce.
5. Season the sauce with salt, black pepper, sugar, and chili powder. Mix well.
6. Add the cooked pasta to the sauce and toss thoroughly. If the sauce is too thick, you can add a little reserved pasta water.
7. Serve the pasta garnished with fresh basil and grated Parmesan cheese.
