A refreshing and delicious lime pie that's perfect for serving at coffee or tea gatherings.Preparation Time: 1 hour + chilling time
Serving Size: 8-10 servings
Ingredients:
- Crust:
- 200 g digestive biscuits
- 100 g butter
- Filling:
- 4 egg yolks
- 1 can (397 g) sweetened condensed milk
- Zest of 3 limes
- 100 ml lime juice (juice from three limes)
- 1 tbsp vanilla sugar
- For Decoration:
- 100 ml heavy cream
- 1 tsp vanilla sugar
- 1 lime
Instructions:
1. Melt the butter and crush the biscuits in a food processor. Add the melted butter and mix until smooth.
2. Line a springform pan with parchment paper and press the biscuit mixture into the bottom and up the sides of the pan.
3. Bake the biscuit crust at 175°C (350°F) for about 8 minutes.
4. Wash the limes thoroughly, zest them finely, and squeeze out the juice.
5. Whisk the egg yolks and sweetened condensed milk together. Add the vanilla sugar, lime zest, and lime juice. Mix well.
6. Pour the filling over the baked crust and bake in the oven at 175°C (350°F) for about 15 minutes.
7. Allow the pie to cool and refrigerate for at least a couple of hours, preferably overnight.
8. Whip the heavy cream with vanilla sugar and pipe it onto the top of the pie.
9. Slice the lime into thin decorative pieces and garnish the pie.
