Delicious lime cupcakes combined with sweet caramel, perfect for any occasion. Preparation Time: 45 minutes
Serving Size: 12 cupcakes
Ingredients
- 2 tsp vanilla sugar- 4 dl all-purpose flour
- 1 dl liquid margarine or melted butter
- ½ dl powdered sugar
- 2 tsp baking powder
- 200 g cream cheese, plain
- Juice and grated zest of 1 lime
- 3-4 dl grated apple
- 3 organic eggs
- 1 dl rolled oats
- 2 tbsp vanilla pudding powder
- 2 dl sugar
Instructions
1. Preheat the oven to 175°C (350°F) and prepare a muffin tin with paper liners.2. In a bowl, mix together the flour, baking powder, vanilla sugar, powdered sugar, rolled oats, and vanilla pudding powder.
3. Add the melted margarine or butter, eggs, lime juice and zest, and cream cheese. Mix until smooth.
4. Fold in the grated apple and mix well.
5. Divide the batter among the muffin cups, filling them about 2/3 full.
6. Bake in the oven for about 20-25 minutes, until the cupcakes are golden brown and cooked through.
7. Allow to cool before serving.
