Creamy Spinach Pasta

Serving Size: 4 servings
Ingredients:
- 300 g pasta (such as spaghetti or fusilli)
- 200 g fresh spinach
- 200 ml heavy cream
- 100 ml grated Parmesan cheese
- 2 garlic cloves (minced)
- 2 tbsp olive oil
- Salt to taste
- Black pepper to taste
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente. Drain, reserving a little cooking water.
2. Heat olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about a minute until soft.
3. Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.
4. Pour the cream into the spinach mixture and stir well. Let the sauce simmer on low heat for about 5 minutes.
5. Stir in the grated Parmesan cheese until melted. Season with salt and black pepper to taste.
6. Combine the cooked pasta with the sauce. Add a little reserved cooking water if the sauce is too thick.
7. Serve immediately, garnished with additional grated Parmesan cheese and black pepper if desired.
