Delicious soft cakes filled with canned fruit, perfect for coffee breaks or dessert. Preparation time: 40 minutes
Serving size: 12 cakes
Ingredients:
- 75 g margarine
- 3/4 dl sugar
- 1 egg
- 2.5 dl flour
- 1 tsp baking powder
- Filling: 1 can of canned fruit (e.g., peaches or pineapple)
Instructions:
1. Melt the margarine and let it cool slightly.
2. In a bowl, whisk together the sugar and egg until light and fluffy.
3. Add the melted margarine to the egg mixture and mix well.
4. In a separate bowl, combine the flour and baking powder. Gradually add the dry ingredients to the wet mixture and stir until smooth.
5. Gently fold in the drained canned fruit into the batter.
6. Grease muffin tins and divide the batter among them.
7. Bake in a preheated oven at 175°C (347°F) for about 20-25 minutes or until the cakes are golden brown.
