Serving Size: 4 servings
Ingredients:
- 400 g spaghetti
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 garlic cloves
- Salt
- Black pepper
- Fresh parsley (optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Cut the bacon into small pieces and fry in a pan over medium heat until crispy. Add crushed garlic to the pan and cook for another minute.
3. Beat the eggs and mix in the grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the spaghetti is cooked, drain it and reserve a little cooking water. Add the pasta to the pan with bacon and garlic.
5. Remove the pan from heat and pour the egg mixture over the pasta. Stir quickly so the eggs don’t scramble but create a creamy sauce. Add a splash of cooking water if needed to reach the desired consistency.
6. Serve immediately, garnished with fresh parsley if desired.
