Ingredients:
- 0.5 liters of water
- 1/2 organic vegetable stock cube
- 8 potatoes
- A piece of leek
- 0.5 teaspoons of salt
- 0.5 teaspoons of sugar
- A pinch of white pepper
- A splash of cream (optional)
Instructions:
1. Peel and dice the potatoes into small cubes.
2. Rinse the leek and slice it into thin rings.
3. Boil the water in a pot and add the vegetable stock cube, stirring until dissolved.
4. Add the diced potatoes and sliced leek to the boiling water.
5. Cook for about 15-20 minutes until the potatoes are soft.
6. Season with salt, sugar, and white pepper.
7. Blend the soup until smooth using an immersion blender or regular blender.
8. Stir in a splash of cream if desired and mix well.
9. Serve hot with your choice of sides.
