Ingredients:
- 2 medium beetroots
- 1 cup cooked quinoa
- 100 g blue cheese (or feta or goat cheese)
- 1 small onion
- 2 garlic cloves
- 1 egg
- 1 cup breadcrumbs
- Salt and pepper to taste
- Oil for frying
Instructions:
1. Peel and boil the beetroots until tender. Let them cool, then grate coarsely.
2. Finely chop the onion and garlic. Sauté them in a pan with oil until soft.
3. In a bowl, mix the grated beetroot, cooked quinoa, and sautéed onion and garlic.
4. Add crumbled blue cheese, egg, and breadcrumbs. Season with salt and pepper.
5. Shape the mixture into patties and fry in oil over medium heat until golden brown on both sides.
6. Serve warm with salad or yogurt sauce.
