Ingredients:
- 400 g spaghetti
- 150 g pancetta or bacon
- 3 egg yolks
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnish, optional)
Instructions:
1. Cook the spaghetti in salted water according to package instructions until al dente.
2. Meanwhile, heat a skillet over medium heat and cook the pancetta or bacon until crispy. Add the minced garlic and cook for another minute.
3. In a bowl, whisk together the egg yolks and grated Parmesan cheese. Season with salt and black pepper.
4. Once the spaghetti is cooked, drain it, reserving a bit of the cooking water. Add the spaghetti to the skillet with the pancetta.
5. Remove the skillet from heat and quickly mix in the egg mixture with the spaghetti, ensuring the eggs do not cook too much. If needed, add a little reserved cooking water to create a creamy consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
