A delicious and nutritious bean stew perfect for everyday meals or special occasions. Enjoy it on its own, with rice, or as a filling for whole grain tortillas.

Ingredients:

- 400 g cooked red beans
- 1 onion, chopped
- 2 garlic cloves, crushed
- 1 bell pepper, diced
- 1 can (400 g) crushed tomatoes
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder (optional)
- Fresh parsley for garnish

Instructions:

1. Heat olive oil in a large pot over medium heat. Add chopped onion and sauté for about 5 minutes until softened.
2. Add crushed garlic and diced bell pepper. Cook for an additional 3-4 minutes.
3. Stir in crushed tomatoes, red beans, and spices. Mix well.
4. Let the stew simmer on low heat for about 10-15 minutes to allow the flavors to meld.
5. Taste and adjust seasoning if necessary, adding more salt or spices as needed.
6. Serve warm, garnished with fresh parsley.
