This easy vegan cookie ice cream is the perfect treat for summer days. It's effortless to make and delicious for everyone!

Ingredients:

- 2 bananas
- 1 cup oat milk (or other plant-based milk)
- 1 cup rolled oats
- 1 cup nuts (such as walnuts or almonds)
- 1 teaspoon vanilla extract
- 2 tablespoons maple syrup or agave syrup
- 1 cup vegan chocolate chips (optional)

Instructions:

1. Peel the bananas and cut them into small pieces.
2. Place the banana pieces, oat milk, rolled oats, nuts, vanilla extract, and maple syrup into a blender.
3. Blend the ingredients until smooth.
4. Gently fold in the chocolate chips (if using).
5. Pour the mixture into a freezer-safe container and smooth the top.
6. Cover the container with a lid or plastic wrap and freeze for at least 4 hours or until completely solid.
7. Take the ice cream out of the freezer about 10 minutes before serving to soften slightly.
8. Scoop servings and enjoy!
