A hearty and flavorful stew made with pork, rice, and white beans in a rich tomato sauce.
Preparation Time: 40 minutes

Ingredients

- 500 g crushed tomatoes
- Oil
- 1 tsp paprika powder
- 1 tsp black pepper, freshly ground
- 1 tsp white pepper, freshly ground
- 2 tsp parsley, chopped
- 1 tsp garlic powder or 1 clove fresh garlic, minced
- 2 dl uncooked rice
- 400 g unseasoned pork strips
- 4 dl water
- 1 tsp thyme
- 400 g white beans in tomato sauce
- 2 bay leaves
- 1 beef bouillon cube
- 100 g peas, corn, and bell peppers mix

Instructions

1. Heat oil in a large pot over medium heat.
2. Add pork strips and sauté until they are nicely browned.
3. Stir in paprika, black pepper, white pepper, parsley, and garlic powder. Mix well.
4. Pour in crushed tomatoes and water. Add rice, thyme, bay leaves, and the beef bouillon cube. Stir.
5. Allow the pot to simmer on low heat for about 20 minutes, until the rice is cooked.
6. Add white beans in tomato sauce and the peas, corn, and bell peppers. Mix and heat for a few more minutes.
7. Check the seasoning and serve hot.
