Carrot Cake (Porkkanapiirakka)

A moist and delicious carrot cake perfect for coffee breaks or as a dessert. Preparation Time: 45 minutes
Serving Size: 8-10 pieces
Ingredients:
- 50 g butter or margarine
- 3 dl grated carrots
- 1 dl melted butter or margarine
- 2 dl all-purpose flour
- 2 dl powdered sugar
- 50 g cream cheese (e.g., Viola)
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp vanilla sugar
- 2 dl sugar
- 2 eggs
- 2 tsp cinnamon
Instructions:
1. Preheat the oven to 200°C (392°F).
2. Grease a round cake pan and dust it with breadcrumbs.
3. In a large bowl, mix the grated carrots, melted butter, cream cheese, and eggs.
4. Add the sugar, powdered sugar, vanilla sugar, and cinnamon, and mix well.
5. In a separate bowl, combine the flour, baking soda, and baking powder.
6. Gradually add the dry ingredients to the carrot mixture and stir until smooth.
7. Pour the batter into the prepared cake pan and level the top.
8. Bake in the oven for about 30 minutes or until the cake is cooked through and golden brown on top.
9. Allow to cool before serving.
