A delicious and moist carrot pie, perfect for coffee breaks or dessert.

Ingredients

Crust:
- 2.5 dl all-purpose flour
- 1 dl grated cheese
- 100 g butter
- 2 tbsp cold water
- 0.5 tsp salt
Filling:
- 3 medium carrots, grated
- 2 eggs
- 1 dl sugar
- 1 dl oil
- 1 dl milk
- 1 tsp cinnamon
- 1 tsp vanilla sugar
- 1 tsp baking powder
- 0.5 tsp salt
- 1 dl chopped nuts (e.g., walnuts)

Instructions

1. Prepare the crust: In a bowl, mix together the flour, grated cheese, and salt. Add the cold butter in cubes and rub until the mixture resembles breadcrumbs. Add the cold water and mix quickly until smooth. Press the dough into the bottom and sides of a pie dish.
2. Pre-bake the crust in a preheated oven at 180°C (350°F) for about 10 minutes until slightly set but not browned.
3. Prepare the filling: Grate the carrots and place them in a bowl. Add the eggs, sugar, oil, milk, cinnamon, vanilla sugar, baking powder, and salt. Mix well.
4. Lastly, stir in the chopped nuts until evenly combined.
5. Pour the filling over the pre-baked crust and smooth the top. Bake at 180°C (350°F) for about 30-35 minutes, or until the filling is set and the top is a beautiful golden brown.
6. Allow to cool before serving. Optionally, dust the pie with powdered sugar for decoration.
