Ingredients
- 5 dl sugar (or half brown sugar/cane sugar) - 2 tsp baking soda
- 7.5 dl grated carrots
- 5 tsp cinnamon
- About 7 dl powdered sugar
- 200 g cream cheese or processed cheese
- 5 eggs
- 7.5 dl all-purpose flour
- 100 g butter
- 250 g margarine
- 5 tsp vanilla sugar
- 3 tsp baking powder
Instructions
1. Preheat the oven to 175°C (350°F). 2. Melt the butter and margarine together in a saucepan.
3. In a large bowl, mix sugar, vanilla sugar, eggs, and the melted butter-margarine mixture.
4. Add the grated carrots and mix well.
5. In a separate bowl, combine the flour, baking powder, baking soda, and cinnamon.
6. Add the dry ingredients to the wet mixture and stir until smooth.
7. Pour the batter into a baking tray lined with parchment paper.
8. Bake in the oven for about 30-40 minutes or until the cake is cooked through (test with a toothpick).
9. Allow to cool before frosting with a mixture of powdered sugar and cream cheese.
