Ingredients:
- 500 g carrots
- 1 onion
- 2 garlic cloves
- 1 tbsp fresh ginger, grated
- 1 red chili, finely chopped
- 400 ml coconut milk
- 500 ml vegetable broth
- 2 tbsp oil
- Salt and pepper to taste
- Fresh coriander for garnish
Instructions:
1. Peel and chop the carrots, onion, and garlic.
2. Heat the oil in a pot. Add the onion and garlic, sauté for about 5 minutes.
3. Add the grated ginger and chili, sauté for an additional minute.
4. Add the carrots, coconut milk, and vegetable broth. Bring to a boil and let it simmer on low heat for about 20 minutes, until the carrots are soft.
5. Blend the soup with an immersion blender or in a regular blender until smooth.
6. Season with salt and pepper. Serve hot, garnished with fresh coriander.
