Ingredients:

- 1 cup fat-free milk
- 1/2 onion
- 1 tablespoon sour cream
- 1/2 potato
- 1 vegetable broth cube
- 3 carrots
- water

Instructions:

1. Peel and chop the onion, potato, and carrots.
2. Place the vegetables in a pot and add enough water to cover them. Add the vegetable broth cube.
3. Cook the vegetables until they are tender, about 15-20 minutes.
4. Blend the cooked vegetables with an immersion blender or in a countertop blender.
5. Stir in the fat-free milk and sour cream into the pureed mixture. Heat the soup gently over low heat.
6. Season the soup with chopped herbs, such as tarragon, chervil, oregano, or parsley.
7. Serve warm.
