A delicious and refreshing cheesecake that combines the flavors of citrus and mango, perfect for dessert or a coffee gathering.
Preparation Time: 30 min + 4 hours in the refrigerator
Serving Size: 8-10 servings

Ingredients:

- 200 g digestive biscuits
- 100 g butter
- 400 g cream cheese
- 200 g sugar
- 200 ml cream
- 1 tsp vanilla sugar
- 2 dl Poplen Citrus & Mango flavor (or another alternative flavor)
- 3 gelatin sheets
- 1 dl water

Instructions:

1. Crush the digestive biscuits into fine crumbs and mix with melted butter.
2. Press the biscuit mixture firmly into the bottom of a springform pan and refrigerate to set.
3. In a bowl, beat the cream cheese, sugar, and vanilla sugar until smooth.
4. Add the cream and Poplen Citrus & Mango flavor to the mixture and combine well.
5. Soak the gelatin sheets in water for about 5 minutes, then squeeze out the excess water and dissolve the gelatin in a small saucepan over low heat.
6. Stir the melted gelatin into the cream cheese mixture.
7. Pour the filling over the biscuit base and smooth the top.
8. Allow the cheesecake to set in the refrigerator for at least 4 hours, preferably overnight.
9. Optionally, decorate with fresh fruits before serving.
