Ingredients:
- 300 g pasta (e.g., penne or fusilli)
- 200 g fresh spinach
- 200 ml cream
- 100 g grated Parmesan cheese
- 2 garlic cloves
- 2 tbsp olive oil
- Salt and black pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Cook the pasta according to package instructions in salted water until al dente. Drain and reserve a bit of the cooking water.
2. Peel and finely chop the garlic cloves. Heat olive oil in a large pan over medium heat.
3. Add the garlic to the pan and sauté for about a minute until soft.
4. Add the fresh spinach to the pan and cook until wilted, about 2-3 minutes.
5. Pour the cream into the pan and stir well. Let it simmer over low heat for about 5 minutes.
6. Add the cooked pasta to the pan and mix all the ingredients together. If the mixture is too thick, add a little reserved pasta water.
7. Stir in the grated Parmesan cheese and season with salt and black pepper to taste.
8. Serve immediately and garnish with fresh basil if desired.
