A delicious pizza that combines the nutrients of barley flour with tasty toppings, creating the perfect meal for both everyday and special occasions. Preparation Time: 1 hour
Serving Size: 3 pizzas
Ingredients:
- Crust:
- 2 dl barley flour
- Approximately 3 dl wheat flour
- 2 dl water
- 2 tsp dry yeast
- 2 tbsp oil
- Just under 1 tsp salt
- Sauce:
- Ketchup
- Chili paste or crushed chili
- Toppings:
- Mozzarella cheese
- Pizza cheese blend
- Prosciutto, dry-cured ham
- Pitted Kalamata olives
- Arugula leaves
Instructions:
1. Heat the water to 24°C (75°F) and mix in the dry yeast.
2. Add barley flour, wheat flour, and salt. Knead well into a firm dough.
3. Add oil and continue kneading. Allow the dough to rise for about half an hour.
4. Preheat the oven as high as possible (for example, 275°C/530°F using convection).
5. Divide the dough into three parts and roll out thin, almost round crusts.
6. Spread ketchup mixed with chili on the pizza bases.
7. Add a thin layer of cheese blend, mozzarella slices, prosciutto, and Kalamata olives.
8. Cover the toppings with another thin layer of cheese blend.
9. Bake the pizza in the hot oven for about 10 minutes or until the crust is cooked.
10. Brush the edges with olive oil and let the pizza cool for a moment.
11. Sprinkle arugula leaves on top before serving.
