New Christmas Salad

A fresh and festive salad combining earthy root vegetables, sweet fruits, and creamy blue cheese. Preparation time: 20 minutes
Serving size: 4 servings
Ingredients:
- ½ celeriac
- 100 g light crème fraîche
- 1 tbsp liquid honey
- Salt to taste
- Freshly ground black pepper
- 1 persimmon
- 1 firm, tart apple
- 50 g blue cheese (e.g., Saint Agur)
- 0.5 dl pecans
- 0.5 dl raw pistachios
- Lettuce and arugula
- Fresh parsley
Instructions:
1. Peel the celeriac and cut it into julienne strips or grate it coarsely.
2. Blanch the celeriac in lightly salted boiling water for about 1-1.5 minutes. Drain and cool it in ice water, then drain again.
3. In a bowl, mix the dressing with crème fraîche, honey, salt, and black pepper. Combine it with the blanched celeriac.
4. Cut the persimmon and apple into pieces. Crumble the blue cheese into bite-sized pieces.
5. Rinse the salad greens and create a bed on a serving plate.
6. Layer the celeriac mixture, pieces of persimmon, apple, blue cheese, and nuts on top of the greens.
7. Garnish the salad with fresh parsley and serve immediately.
