A delightful and easy dessert that combines the flavor of pistachios with a creamy texture. This pudding is the perfect treat for summer evenings or festive occasions. Preparation Time: 30 minutes + 2 hours chilling time
Serving Size: 2 generous or 4 smaller servings
Ingredients:
- 2 1/2 dl heavy cream - 1/2 dl sugar
- 75 g shelled pistachios
- 2 gelatin sheets
- 200 g Greek yogurt
- For garnish: pistachios and dark chocolate
Instructions:
1. Soak the gelatin sheets in cold water for about 5 minutes. 2. Grind the shelled pistachios in a food processor until finely ground.
3. In a saucepan, combine the cream, sugar, and pistachio powder. Bring to a boil and stir until the sugar is dissolved.
4. Squeeze excess water from the gelatin sheets and add them one at a time to the hot cream mixture. Allow to cool slightly.
5. In a bowl, mix the Greek yogurt until smooth. Pour the slightly cooled cream mixture through a sieve into the yogurt and blend until smooth.
6. Pour the mixture into two or four serving dishes.
7. Let the mixture chill in the refrigerator for a couple of hours, preferably overnight.
8. Before serving, garnish with pistachios and dark chocolate.
