- 400 g potatoes
- 200 g carrots
- 1 onion
- 2 dl cream
- 100 g cheese (e.g., cheddar)
- 2 tablespoons oil
- Salt and pepper to taste
- Fresh herbs (e.g., parsley or chives)

Instructions:

1. Peel and dice the potatoes and carrots into small cubes.
2. Heat the oil in a pan and add the chopped onion. Sauté the onion until it is soft.
3. Add the diced potatoes and carrots to the pan. Cook for a few minutes until they start to color.
4. Pour in the cream and season with salt and pepper. Let it simmer on low heat for about 15-20 minutes, until the vegetables are tender.
5. Grate the cheese and stir it into the mixture until melted.
