A delicious side dish featuring tender new potatoes tossed with fresh herbs.

Ingredients:
- 500 g new potatoes
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 dl fresh herbs (e.g., parsley, chives, thyme)
- Juice of 1 lemon
- 1 clove garlic (optional)
Instructions:
1. Peel the new potatoes and cut them in half or quarter them.
2. Boil the potatoes in salted water for about 15-20 minutes, until tender but not mushy.
3. Drain the cooked potatoes and return them to the pot.
4. Add olive oil, salt, black pepper, and chopped herbs to the potatoes.
5. Squeeze lemon juice over the potatoes and mix gently.
6. If using garlic, mince it and add to the mixture.
7. Serve warm as a side dish or a light main course.
