Ingredients:
- 300 g spaghetti- 150 g bacon or pancetta
- 2 eggs
- 100 g parmesan cheese (grated)
- 2 garlic cloves (minced)
- Salt to taste
- Black pepper to taste
- Fresh parsley (for garnishing, optional)
Instructions:
1. Cook spaghetti in salted water according to package instructions until al dente.2. Once pasta is ready, reserve about 1 cup of the cooking water and drain the spaghetti.
3. Heat a skillet over medium heat and add the bacon. Cook until crispy.
4. Add minced garlic to the bacon and sauté for an additional minute.
5. In a bowl, whisk together the eggs, grated parmesan cheese, salt, and black pepper.
6. Add the drained spaghetti to the bacon-garlic mixture and mix well.
7. Remove the skillet from heat and pour the egg mixture over the pasta. Stir quickly to prevent the eggs from overcooking. Add reserved cooking water as needed to achieve the desired sauce consistency.
8. Serve immediately, garnished with fresh parsley if desired.
