Ingredients:
- 300 g pasta (e.g., spaghetti)
- 150 g bacon or pancetta
- 2 eggs
- 100 g grated Parmesan cheese
- 2 cloves garlic
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
1. Cook the pasta in salted water according to the package instructions until al dente.
2. In a skillet over medium heat, cook the bacon or pancetta until crispy. Add the crushed garlic cloves to the pan and sauté for another minute.
3. In a bowl, whisk the eggs and mix in the grated Parmesan cheese. Season the mixture with salt and black pepper.
4. Once the pasta is cooked, drain it, reserving a little cooking water. Add the pasta to the skillet with the bacon and garlic.
5. Remove the skillet from the heat and pour the egg mixture over the pasta, stirring quickly. Add a bit of reserved cooking water if needed to create a creamy sauce.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
