Ingredients

- 250 g fresh spinach pasta (e.g., pastello)
- 1 tsp salt
- 0.25 tsp sugar
- 1 tbsp lemon juice (juice of about 1 lemon)
- 2 garlic cloves
- 0.25 tsp cracked black pepper
- 4 radishes
- 2 green onions
- Olive oil
- 1 tsp grated Parmesan cheese
- 2 tbsp mustard

Instructions

1. Bring a large pot of water to a boil and add salt.
2. Add the fresh spinach pasta to the boiling water and cook according to package instructions.
3. Once the pasta is cooked, drain it and reserve a little cooking water.
4. Sauté finely chopped garlic in olive oil in a pan.
5. Add the drained pasta to the pan and stir in lemon juice, sugar, and cracked black pepper.
6. If needed, add reserved cooking water to prevent the pasta from drying out.
7. Slice the radishes and chop the green onions. Add them to the pasta and mix well.
8. Serve the pasta with grated Parmesan cheese and mustard on the side.
