Ingredients:
- 2 eggs
- Salt and pepper to taste
- A small handful of fresh spinach
- About 0.5 dl of cheese (e.g., cheddar)
- Olive oil for frying
Instructions:
1. Crack the eggs into a bowl and whisk them lightly. Season with a pinch of salt and ground black pepper.
2. Drizzle a small amount of olive oil into a pan and heat over medium heat.
3. Pour the eggs into the pan and tilt it to spread the egg mixture evenly.
4. Rinse and dry the spinach. Grate about half a deciliter of cheese.
5. When the egg mixture starts to set, add the spinach and grated cheese on top.
6. Use a spatula to fold the omelette in half.
7. Remove the pan from the heat and let the omelette sit for a moment to allow the spinach to soften and the cheese to melt.
