Spinach Antipasto

A delicious and refreshing side dish that brings a touch of Italy to your summer table. This recipe is a great way to utilize fresh summer spinach. Preparation Time: 30 minutes
Serving Size: 4-6 servings
Ingredients:
- 200 g fresh spinach
- 1 dl olive oil
- 2 cloves garlic, minced
- 100 g cherry tomatoes, halved
- 100 g feta cheese, crumbled
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions:
1. Rinse the fresh spinach thoroughly and dry it.
2. Heat the olive oil in a pan over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
3. Add the spinach to the pan and cook until it wilts, about 3-4 minutes.
4. Add the cherry tomatoes and continue to cook for another 2-3 minutes until the tomatoes soften slightly.
5. Remove the pan from heat and stir in the feta cheese and balsamic vinegar. Season with salt and pepper.
6. Serve the antipasto warm or at room temperature. Garnish with fresh basil if desired.
