Ingredients:
- 400 g pasta (e.g., spaghetti) - 150 g bacon or pancetta
- 3 eggs
- 100 g Parmesan cheese (grated)
- 2 garlic cloves (chopped)
- Salt
- Black pepper
- Fresh parsley (for garnish)
Instructions:
1. Cook the pasta in salted water according to package instructions until al dente.2. Cut the bacon or pancetta into small pieces and fry in a pan over medium heat until crispy. Add the chopped garlic and sauté for another minute.
3. In a bowl, whisk together the eggs and mix in the grated Parmesan cheese. Season with salt and black pepper.
4. Once the pasta is cooked, drain it and reserve a bit of the cooking water. Add the pasta to the pan with the bacon.
5. Remove the pan from the heat and immediately mix in the egg mixture with the pasta. Add a little reserved cooking water if needed to achieve a creamy consistency.
6. Serve immediately, garnished with fresh parsley and additional Parmesan cheese if desired.
