A quick and delicious spice cookie recipe perfect for the holidays. Preparation Time: 1 hour
Serving Size: 24 cookies
Ingredients:
- 1 ½ dl sugar
- 1 ½ dl potato flour
- 2 ½ dl wheat flour
- 1 tsp baking powder or baking soda
- 1 tsp vanilla sugar
- 1 dl syrup
- 100 g butter
- 1 tsp cinnamon
- 1 tsp ginger
- ½ tsp clove
Instructions:
1. Melt the butter in a saucepan, then add the syrup and sugar. Heat gently until the sugar has dissolved.
2. In a bowl, mix the dry ingredients: potato flour, wheat flour, baking powder, vanilla sugar, cinnamon, ginger, and clove.
3. Pour the melted butter and syrup mixture into the dry ingredients and stir until a smooth dough forms.
4. Wrap the dough in cling film and refrigerate for about 30 minutes.
5. Preheat the oven to 175°C (347°F).
6. Roll out the dough to about 0.5 cm thick and cut into desired shapes using cookie cutters.
7. Place the cookies on a baking sheet lined with parchment paper and bake in the oven for about 8-10 minutes, until golden brown.
8. Allow to cool before serving.
