Ingredients:

- 500 g new potatoes
- 100 ml olive oil
- 2 tbsp white wine vinegar
- 1 tsp Dijon mustard
- 1 small red onion
- 100 ml fresh parsley
- 100 g cherry tomatoes
- Salt to taste
- Black pepper to taste

Instructions:

1. Boil the potatoes with their skins in salted water until tender. Allow to cool.
2. Prepare the dressing by mixing olive oil, white wine vinegar, Dijon mustard, salt, and black pepper in a bowl.
3. Peel and chop the red onion. Finely chop the parsley.
4. Cut the cooled potatoes into cubes and place them in a large bowl.
5. Add the red onion, parsley, and halved cherry tomatoes to the potatoes.
6. Pour the dressing over the potatoes and gently mix to combine without crushing the ingredients.
7. Let the salad chill in the refrigerator for about 15-30 minutes before serving.
