A refreshing spring potato salad featuring delicious flavors from capers and spring onions. Perfect for summer meals.

Ingredients:
- 600 g new potatoes
- 100 g capers
- 4 spring onions
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- Salt to taste
- Black pepper to taste
- Fresh parsley for garnish
Instructions:
1. Peel and boil the potatoes in salted water until tender. Drain and let cool.
2. Cut the cooled potatoes into cubes.
3. Chop the spring onions and add them to the potatoes.
4. Add the capers to the potato and onion mixture.
5. In a separate bowl, mix the olive oil and white wine vinegar. Pour the mixture over the salad.
6. Season with salt and black pepper. Gently toss to combine.
7. Garnish with fresh parsley before serving.
